Can you use PI gaskets?
I have looked at some pictures but not tried it with any parts but it appears that the PI intake gasket would seal to the NPI head without a problem and not have any sealing issue with the intake. Whereas the NPI gasket falls off the sealing surface of the intake. This is only if you do not epoxy the intake. Maybe I am not seeing something though.

I can try and find the paper I had the coolant tube part # written on, but I think I threw it away.
The driver side CTS tells the computer when to turn the fans off. Without it hooked up, you will get the fans on 100% of the time.

The othe posibility for the cts, is that if u get a pi intake with an aluminum coolant runner, then u could just drill and tap the runnerfor the sensor and u wouldnt need to splice the wires.

I could have sworn my 2000 Vic only had one ECT...

96-98 has two.. 99+ only has 1

A pic is worth a thousand words
Here's a pi intake with and aluminum coolant crossover
Heres a non pi intake with aluminum runner,
As u can se the aluminum coolant runer is nearly identical, save for the extra hole in the non pi intake right before the thermostat housing. The same thing can be done with the pi intake. All that has to be done is theat the hole needs to be drilled and tapped in order for the coolant temp sensor to screw into it.

It looks like you guys are right...
97 Vic shows an ECT and a ECT Sender... one is for the PCM the other is for your instrument cluster gauge.
00 Vic shows only the ECT Sender, and its tied into both the PCM and instrument cluster.

So can the average guy complete this, i've worked alot on every part on my car expect the engine so I'm a little scared about going into this by myself even though I always have fun working on my baby
